Center of effort

I've taken Tilling Time out only once due to heat (at 81 I can't tolerate it as I used to) and other distractions.  On that one time in light air, flying main and jib, it had a pronounced tendency to turn off the wind.  For that reason and to make the mast easier to step (trailer queen) I had the forestay replaced with a quick release at the bottom.  I just trailered 3/4 of a mile to a parking lot, the closest place I can step the mast (trees).  The longest setting the three-setting release raked the mast back . . . rakishly.  I settled on the middle setting and think I've got a slight rake. 
Question:  What experience have y'all had with mast raking/center of effort adjusting?

My eclipse had a bad tendency to go into irons while tacking in light to moderate winds.  As it came from the factory the mast had a slightly forward rake to it.  Gerry told me that was to compensate for the stern settling from weight in the cockpit while sailing.  I discovered that raking the mast aft some removed the tendency to go into irons.
