Hi ! . Am thinking of getting a cp 19.  Would be taking some mini cruises: 1-4 days.. Any thoughts on sleeping comfort level for one person, 6 feet high/long. Thanks! Capi.

Sounds like a match made in heaven.  The bunks are 6'4" long so you're OK there.  Plenty of room to store 4 days of food/supplies and camping stuff.
Comfort wise the bunks are pretty nice for a small boat.  Ventilation and keeping cool (or warm) will be the challenge.

As a teaser, here's the interior of Island Time. Cushions are custom, generally the fabric is not as shown.

I agree with Salty19.  The 19 would be a great fit for sleeping single.  B and I prefer the V berth, but for a single I think the side berths would be quite comfy.  I highly recommend adding a couple inches of padding to the original pads as we found them to be too thin.  In our V berth we added a 2" thick Memory Foam pad cut to fit the area.  Ahhhhhh!  Much better!  When we go out sailing it is almost always for 1-3 nights at anchor (some 5-6 night stays), so the 19 will certainly work for you.

One modification we made to the V-berth was to extend it 24" on one side. We did this by adding a galley where the starboard berth was.  The counter doubles as a place to put a cushion that extends my sleeping area.   I am over 6' and found the V-berth just a little too short.  Now it works great.
