Is this for a CP-16 so ...
Two ways to go.

~Gloss white Rustoleum oil base enamel and seat cushions of any favorite material.

~Spray on 'splatter in grey' like the inside of automotive trunks. NAPA, AutoZone, Pepboys ... [splatter is not my favorite] with cushions.

My CP-19 XL is all white inside [even the drop board which is cut in half for easy storage] 'cept for the waxed wooden battens and rugs up the hull to the fiberglass XL insert overhead.

If your always sailing in the tropics, maybe a soft, cooling sky blue would make the inside feel cooler. The 'P's painted the roof of their porch in Norfolk a soft sky blue. It relaxes the mind and cools the body.

Funny you should mention the blue. When repainting the undersides of the sliding hatch and forward hatch on my 23, I did them in a high gloss sky blue. I think I used Brightsides enamel. It's nice to add some color to the cabin. Maybe I got the idea from seeing  restored Victorian homes with wrap around porches with the underside of the roof painted blue.
