I was hoping to buy some patch paste from Spectrum Color. However, they asked me to "reach out to ComPac with the year and hull ID and ask for the coating part number." Clearly, that is no longer possible. Does anyone know the coating part number for a 2019 SunDay17? Or how I might discover the coating part number.

Yeah, that may be tough. Com-Pac put out nice parts lists for their models, but the listings tended to be more generic. Since there'd be several gelcoat colors for the deck and hull, they'd typically list "gelcoat" at a fixed price, or price TBD if it would vary. I do have a pdf of the '23 Sun Cat price list and see no mention of gelcoat.
I did file a warranty claim in 2014 for my 2010 PC, a void in the CB trunk layup broke through. They sent me a can of gelcoat that matched very well, but even then there was no color code on the container. You might try one of the long-term dealers, they may have an idea. Gelcoat doesn't store well, unfortunately.
Color matching isn't too hard, it just takes some patience and experience. Let a sample set up and cure well before deciding to proceed. Make sure you record your ingredients accurately so it can be duplicated. Measuring by weight (to a hundredth of a gram if possible) tends to be more reliable than volume, and is easier to scale up. I'd start with a lighter colored base and add dry artist pigments, well integrated in solvent and/or base as necessary, gradually.
