I think I'm going to get a largish toy rowboat to tow behind as a dink.

Everything is relative. 35 mph in a stretch limo is nothing; being towed behind it on roller skates is terrifying.
What is your plan for the purpose of the dingy? You can practically beach a 16. Or at least anchor in knee deep water off a shallow beach. I do that frequently with our Eclipse. Outside of having something to tour sea caves, or if you have a bridge or other obstruction to get under to get to a destination, I don't see a need.
I am laughing at that idea, in a good way. Back in the 1980's we had a group, Midwest Compac Association, that met and cruised most weekends, and took a couple of long range trips per year.
We would drive up to Spanish, Ontario and launch 6 to 10 16's and a 19 or two and cruise the north channel for a week. To your point we would take turns pulling a "PortaBoat", folding dingy, around behind. Main function was to hold the garbage bags of left overs, beer cans and other trash for the week. Oak Harbor, The Bengamin Islands, Clapperton Island, Tobermory, Bay Fein.
When we got back to land, emptied the trash, folded the boat flat and strapped it to the top of a car.

I don't believe there are videos. Those days were 8mm video film. I don't remember anyone bringing one.
I still have the 16. Its in great shape.
We keep an inflatable kayak stored below. Saves dragging a dinghy around that we might or might not use.
